Chicken Rice Casserole

Ingredients:

6 slices of Bacon
2 lb Chicken – cooked and shredded
1 onion
1/2 cup celery
4 cups cooked rice
2 cans mushroom soup
2 cups sour cream
1 tbsp butter
salt and pepper to taste

1/2 cup bread crumbs
1 pkg spinach

Directions:

Cook Bacon, onion and celery until tender. Combine rice, chicken, bacon, onion, celery, spinach and salt. Combine soup and sour cream and mix into meat mixture. Spoon into 11 x 7 casserole dish. Toss bread crumbs into melted butter and sprinkle over top.

Bake at 350 for 30 – 50 minutes, until heated through.
