Sausage & Pepper Skillet
Ingredients:
2 lb mild Fresh Sausage
2 tbsp olive oil
1 cup sliced white onion
1 cup slice red onion
1 red pepper sliced
1 yellow pepper sliced
1 orange pepper sliced
3 garlic cloves
3/4 tsp salt
1/2 tsp pepper
1/4 red pepper flakes
1/2 cup chicken broth (or white wine)
1 tbsp chopped parsley
2 tbsp chopped fresh basil
Directions:
Heat the olive oil in a large skillet over med. heat. Add the sausage links and cook for about 2 minutes each side, just until they brown. The sausage will not be cooked through, but place them on a cutting board and slice them and set aside.
Add the onions to the skillet and cook just for about 2 minutes, stirring constantly. Add the peppers, garlic, salt, pepper and flakes and cook all together for about 5 minutes, just until tender crisp.
Add the chicken broth or wine to the skillet and scrape the bottom to release all the flavour bits.
Return the sausage to the skillet and mix with veggies. Cover and simmer for about 10 minutes on medium low.
Uncover, and cook for just a few minutes on medium-high until liquid is evaporated and the sausages are cooked through.
Top with parsley and basil to serve.
