Chicken Bacon Ranch Potato Casserole


1 lb chicken thighs
1/4 lb bacon, chopped
1 yellow onion, chopped
1 green pepper, chopped
Ranch Dressing
5 – 6 Russet Potatoes, peeled and cubed
Olive Oil
Seasoning (Joyful Lynn or JP Smittys are both excellent)
Shredded Cheddar
Green Onions
Crispy Fried Onions


Toss cubed potatoes in olive oil and seasoning. Bake at 425F for 10-15 minutes, or  until easily poked with fork. Transfer to a greased 9 x 13 casserole.
Cut chicken and bacon into smaller pieces, fry in butter or olive oil on medium heat with the onions and peppers until chicken is cooked through. Use seasoning of choice for flavour and some white wine or chicken broth to keep it from drying out. Transfer to over top the potatoes in the casserole dish.
Mix the Cheddar, Green Onions and Crispy Onions and sprinkle over top the casserole dishes. 

Bake at 350F for about 45 minutes (heated through and sizzly)
