We have a number of recipes that we will stuff portobello mushrooms with. Sometimes it's Spinach Feta Italian Sausage, sometimes it's Fiesta Quinoa with black beans and corn, sometimes it's Jalepeno Cheddar Sausage. It's always Easy and Delicious. And Easy.

I prefer to use tender beef strips or chopped up leftover roast (the few times there are left over roasts around) but in a pinch have used ground beef and have settled on this recipe as my usual go to. It's pretty easy to throw together in the after school crazy, but you do need to watch the pot a bit.
