Slow-Roasted Sirloin Tip with Garlic Mashed Potatoes & Honey-Glazed Carrots

Ingredients:

For the Sirloin Tip Roast:

– 3–4 lb Canadian AAA Sirloin Tip Roast (available fresh at Schinkels’)

– 2 tbsp olive oil

– 1 tbsp kosher salt

– 1 tsp black pepper

– 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

– 1 tbsp fresh thyme, chopped (or 1 tsp dried)

– 4 cloves garlic, minced

– 1 small onion, sliced

– 1 cup beef broth

For the Garlic Mashed Potatoes:

– 2 lbs Yukon Gold or Russet potatoes, peeled and quartered

– 4 cloves garlic, peeled

– 1/2 cup butter

– 1/2 cup whole milk (or cream for extra richness)

– Salt and pepper to taste

For the Honey-Glazed Carrots:

– 1 lb carrots, peeled and cut into sticks or coins

– 2 tbsp butter

– 2 tbsp honey

– 1/2 tsp salt

– Fresh parsley for garnish (optional)

Directions:

Prepare the Roast:

1. Preheat oven to 275°F.

2. Pat roast dry and rub with olive oil, salt, pepper, rosemary, thyme, and minced garlic.

3. Place sliced onion in the bottom of a roasting pan. Set the roast on top and pour beef broth into the pan.

4. Cover loosely with foil and slow roast for about 2.5 to 3 hours, or until internal temperature reaches 135°F for medium-rare (or adjust to your preferred doneness).

5. Remove from oven, tent with foil, and let rest for at least 15 minutes before slicing.

Make the Garlic Mashed Potatoes:

1. Boil potatoes and garlic cloves in salted water until tender (about 15–20 minutes).

2. Drain and mash with butter and milk until smooth. Season with salt and pepper to taste.

Prepare the Honey-Glazed Carrots:

1. In a skillet over medium heat, melt butter. Add carrots and cook for 5–7 minutes until starting to soften.

2. Stir in honey and salt, and cook for another 5 minutes, stirring frequently, until carrots are tender and glossy.

3. Garnish with chopped parsley if desired.

Serve:
