BBQ Chicken Wings with Grilled Chili-Lime Corn on the Cob

Ingredients:

For the Chicken Wings:

– 2 lbs Schinkels’ Fresh Chicken Wings

– 1 tbsp olive oil

– Salt & pepper, to taste

– 1 tsp garlic powder

– 1 tsp smoked paprika

– ½ tsp chili powder

– ½ tsp onion powder

– ½ cup of your favourite BBQ sauce (or more for basting)

For the Chili-Lime Corn:

– 4 ears of fresh local corn, husked

– 2 tbsp melted butter

– 1 tsp chili powder

– Juice of 1 lime (plus wedges for serving)

– ¼ cup crumbled cotija or feta cheese (optional)

– 2 tbsp chopped cilantro (optional)

– Salt, to taste

Directions:

Prep the Wings:

Pat chicken wings dry with paper towels. In a large bowl, toss them with olive oil, salt, pepper, garlic powder, smoked paprika, chili powder, and onion powder until evenly coated.

Grill the Wings:

1. Preheat your grill to medium heat (about 400°F).

2. Place wings on the grill and cook for 20–25 minutes, flipping occasionally, until the skin is crisp and the internal temperature reaches 165°F.

3. In the last 5 minutes, brush BBQ sauce on the wings and turn frequently to caramelize the sauce.

Prep the Corn:

1. Brush corn with melted butter and sprinkle with chili powder and salt.

2. Grill corn directly on medium heat for about 10 minutes, turning occasionally until lightly charred all over.

3. Squeeze fresh lime juice over the corn and sprinkle with cheese and cilantro if using.

Serve:

Plate the wings with the grilled corn on the side and lime wedges for squeezing.
