Slow Cooker Mexican Chicken with Rice and Guacamole

🍗 Slow Cooker Mexican Chicken with Rice and Guacamole!
Ingredients:
– 1 whole chicken (3-4 lbs)
– 1 tablespoon taco seasoning
– 1 tablespoon garlic powder
– 1 tablespoon onion powder
– 1 teaspoon cumin
– Salt and pepper, to taste
– 1 cup long-grain white rice
– 2 cups chicken broth
– 1 avocado, mashed
– 1/4 cup diced tomatoes
– 1 tablespoon lime juice
– 1/4 cup chopped cilantro
– 1 jalapeño, finely chopped (optional)
Instructions:
1. Place the whole chicken in the slow cooker and season with taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Add a splash of water or chicken broth to keep it moist.
2. Cook on low for 6-7 hours, until the chicken is fully cooked and shreds easily.
3. While the chicken cooks, prepare the rice by bringing chicken broth to a boil, adding the rice, covering, and simmering for 15 minutes or until tender.
4. For the guacamole, mash the avocado and stir in diced tomatoes, lime juice, cilantro, and jalapeño (if using). Season with salt and pepper.
5. Once the chicken is done, shred it and serve over a bed of rice with a side of guacamole.
