Orange-Glazed Boneless Turkey Breast with Herb-Infused Rice

Ingredients:
For the Orange-Glazed Turkey Breast:
– 1 boneless turkey breast (about 3-4 lbs)
– 2 tablespoons olive oil
– Salt and pepper, to taste
– 1 cup orange juice
– 2 tablespoons honey
– 2 teaspoons Dijon mustard
– 1 teaspoon grated fresh ginger
– 2 cloves garlic, minced
For the Herb-Infused Rice:
– 1 cup basmati or long-grain rice
– 2 cups chicken broth
– 1 tablespoon olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon fresh parsley, chopped
– 1 tablespoon fresh thyme, chopped
– Salt and pepper, to taste
Instructions:
1. Roast the Turkey: Preheat the oven to 375°F. Rub the turkey breast with olive oil, salt, and pepper. Roast for 1.5 to 2 hours or until the internal temperature reaches 165°F. Let rest.
2. Make the Glaze: In a saucepan, simmer the orange juice, honey, Dijon mustard, ginger, and garlic for 10-15 minutes. Brush over the turkey during the last 10 minutes of roasting.
3. Prepare the Rice: Heat olive oil in a saucepan, sauté onion and garlic for 2-3 minutes. Add rice, then chicken broth, parsley, and thyme. Simmer, covered, for 18-20 minutes until the rice is tender.
4. Serve: Slice the turkey, serve over rice, and drizzle with extra glaze. Garnish with fresh herbs.
