Sweet and Savoury Pork Loin Roast with Maple-Glazed Veggies

Ingredients:
For the Pork Loin:
– 1 boneless pork loin roast (about 3-4 lbs)
– 1 tbsp olive oil
– 1 tbsp brown sugar
– 2 tbsp apple cider vinegar
– 2 tsp smoked paprika
– Salt and pepper, to taste
For the Roasted Vegetables:
– 1 lb green beans, trimmed
– 2 cups baby carrots
– 2 large sweet potatoes, peeled and cubed
– 2 tbsp olive oil
– 2 tbsp pure maple syrup
– 1 tsp cinnamon
– Salt and pepper, to taste
Instructions:
1. Preheat the oven to 375°F.
2. Rub the pork loin roast with olive oil, brown sugar, apple cider vinegar, smoked paprika, salt, and pepper. Place the pork roast on a rack in a roasting pan and roast for 60-75 minutes, or until the internal temperature reaches 145°F.
3. For the roasted vegetables, toss the green beans, carrots, and sweet potatoes in olive oil, maple syrup, cinnamon, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes until tender and lightly caramelized.
4. Once the pork is cooked, let it rest for 10 minutes before slicing. Serve the slices with the maple-glazed roasted vegetables for a comforting, sweet-and-savoury meal.
