Italian-Style Sirloin Tip Roast with Parmesan Risotto & Roasted Zucchini

Ingredients:
For the Sirloin Tip Roast:
– 2–3 lb sirloin tip roast
– 2 tbsp olive oil
– 1 tbsp Italian seasoning
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tsp crushed red pepper flakes (optional)
– Salt & pepper to taste
– 3 cloves garlic, sliced
– ½ cup beef broth or red wine (for roasting pan)
For the Parmesan Risotto:
– 1 tbsp olive oil or butter
– 1 small onion, finely chopped
– 1 cup Arborio rice
– ½ cup dry white wine (optional)
– 3 cups chicken or vegetable broth, warmed
– ½ cup grated Parmesan cheese
– Salt & pepper to taste
– Chopped parsley (for garnish)
For the Roasted Zucchini:
– 2–3 zucchini, sliced into rounds or half-moons
– 1 tbsp olive oil
– 1 tsp Italian seasoning
– Salt & pepper to taste
– Optional: grated Parmesan for topping
Directions:
Prepare & Roast the Sirloin Tip:
1. Preheat oven to 325°F (165°C).
2. Rub the roast with olive oil, then season with Italian seasoning, garlic powder, onion powder, crushed red pepper (if using), salt, and pepper.
3. In a hot skillet, sear the roast on all sides (2–3 minutes per side) for a golden crust.
4. Place roast in a roasting pan with garlic slices and broth or red wine. Cover with foil.
5. Roast for 1.5 to 2 hours, or until internal temperature reaches 135–140°F (57–60°C) for medium-rare. Let rest 10–15 minutes before slicing.
Cook the Parmesan Risotto:
1. In a saucepan, heat olive oil or butter over medium heat. Add onion and sauté until soft (about 3–4 minutes).
2. Add Arborio rice and stir to coat. Toast for 1–2 minutes.
3. Pour in white wine (if using) and stir until absorbed.
4. Add warm broth 1 ladle at a time, stirring constantly and letting each addition absorb before adding more. This takes about 18–20 minutes.
5. Once rice is creamy and tender, stir in Parmesan cheese, and season with salt and pepper. Garnish with parsley.
Roast the Zucchini:
1. Toss zucchini with olive oil, Italian seasoning, salt, and pepper.
2. Spread on a baking sheet and roast at 400°F (200°C) for 15–18 minutes, until golden and tender.
3. Optional: sprinkle with grated Parmesan before serving.
