Teriyaki Salmon Bowls with Jasmine Rice & Stir-Fried Veggies

🍽 Bite of the Week features Fresh Atlantic Salmon Boneless Fillets

👇🏻 Here’s a market fresh meal idea:

Ingredients:

For the Salmon & Teriyaki Sauce:

– 2 fresh Atlantic salmon boneless fillets

– ¼ cup soy sauce

– 2 tbsp honey or brown sugar

– 1 tbsp rice vinegar

– 1 tbsp sesame oil

– 2 garlic cloves, minced

– 1 tsp fresh ginger, grated (or ½ tsp ground ginger)

– 1 tsp cornstarch + 1 tbsp water (for thickening)

– 1 tsp sesame seeds (optional)

– 2 green onions, sliced (for garnish)

For the Jasmine Rice:

– 1 cup jasmine rice

– 2 cups water

– Pinch of salt

For the Stir-Fried Veggies:

– 1 tbsp vegetable or sesame oil

– 1 cup broccoli florets

– 1 bell pepper, sliced

– 1 carrot, julienned or thinly sliced

– ½ cup snap peas

– Salt & pepper to taste

– Splash of soy sauce (optional)

Directions:

Cook the Jasmine Rice:

1. Rinse rice under cold water until it runs clear.

2. In a pot, combine 1 cup rice with 2 cups water and a pinch of salt.

3. Bring to a boil, reduce heat to low, cover, and simmer for 12-15 minutes or until water is absorbed. Remove from heat and let sit covered for 5 minutes. Fluff with a fork.

Make the Teriyaki Sauce:

1. In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.

2. Bring to a simmer over medium heat.

3. Mix cornstarch with water, then stir into the sauce. Cook for 1–2 minutes, until thickened. Remove from heat.

Cook the Salmon:

1. Heat a skillet over medium-high heat with a small amount of oil.

2. Season salmon lightly with salt and pepper.

3. Cook skin-side down (if applicable) for 3–4 minutes, then flip and cook another 3–4 minutes, until just cooked through.

4. Brush generously with teriyaki sauce during the last minute of cooking.

Stir-Fry the Vegetables:

1. In another pan or wok, heat oil over medium-high heat.

2. Add veggies and stir-fry for 4–5 minutes until crisp-tender.

3. Season with a splash of soy sauce, salt, and pepper to taste.

Assemble the Bowls:

1. Scoop jasmine rice into bowls.

2. Top with salmon fillets and a drizzle of extra teriyaki sauce.

3. Add a portion of stir-fried veggies to each bowl.

4. Garnish with green onions and sesame seeds.
