Crispy Pickerel Fish & Chips

🍽 Bite of the Week features Fresh Lake Erie Pickerel

👇🏻 Here’s a market fresh meal idea:

Ingredients:

For the Fish:

– 1 to 1.5 lbs fresh pickerel fillets (boneless)

– 1 package Taylor’s One Step Breading (on sale this week at Schinkels’!)

– Vegetable oil for frying

– Lemon wedges (for serving)

– Optional: tartar sauce, fresh parsley

For the Chips (Fries):

– 4 large russet potatoes, peeled and cut into fries

– Vegetable oil for frying

– Salt to taste

– Optional: vinegar or your favourite fry seasoning

Directions:

Prepare the Fries:

1. Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).

2. Rinse cut potatoes under cold water, then pat dry.

3. Fry in small batches for 5–7 minutes until golden and crispy.

4. Remove and drain on paper towels. Season with salt.

Bread & Fry the Pickerel:

1. Rinse and pat dry the pickerel fillets.

2. Pour Taylor’s One Step Breading into a shallow dish.

3. Coat each fillet thoroughly, pressing gently to help it stick.

4. Let sit for 5–10 minutes before frying.

5. In a skillet or fryer, heat ½ inch of oil to 350°F (175°C).

6. Fry fillets for 3–4 minutes per side, or until golden and crispy.

7. Remove and drain on paper towels.
