Ginger Garlic Pork Stir Fry with Rice & Broccoli

Ingredients (Serves 4):
Stir Fry Base:
– 1 lb Lean Ground Pork (from Schinkels’ Meat Market)
– 2 tbsp vegetable oil (divided)
– 3 cups broccoli florets (fresh or frozen)
– 1 red bell pepper, thinly sliced
– 1 small onion, thinly sliced
– 2 cloves garlic, minced
– 1 tbsp fresh ginger, grated
Sauce:
– ⅓ cup soy sauce (low sodium)
– 2 tbsp brown sugar (or honey)
– 1 tbsp rice vinegar (or lime juice)
– 1 tbsp sesame oil (optional for extra flavour)
– 1 tsp cornstarch + 2 tbsp water (for thickening)
To Serve:
– Cooked jasmine or basmati rice
– Sesame seeds (optional)
– Green onions, sliced
Directions:
Prep the Sauce
– In a small bowl, whisk together soy sauce, brown sugar, vinegar, sesame oil (if using), and cornstarch slurry. Set aside.
Cook the Veggies
1. Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
2. Add broccoli, peppers, and onions. Stir fry for 4–5 minutes, until tender-crisp. Transfer to a bowl.
Cook the Pork
1. Add remaining oil to the pan.
2. Add ground pork and cook until browned, breaking it up as it cooks (about 5 minutes).
3. Add garlic and ginger, stir and cook 1 more minute until fragrant.
Bring it Together
1. Return veggies to the pan. Pour in the sauce and toss everything together.
2. Cook for 2–3 minutes until the sauce thickens and everything is coated.
Serve & Enjoy – Spoon over cooked rice, top with sesame seeds and green onions.
