Garlic Herb Sirloin Tip Roast with Roasted Potatoes & Carrots

Ingredients (Serves 4):
For the Roast:
– 1 Sirloin Tip Roast (approx. 2–3 lb) – from Schinkels’ Meat Market
-3 tbsp olive oil
– 4 cloves garlic, minced
– 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
– 1 tbsp fresh thyme, chopped (or 1 tsp dried)
– 1 tsp kosher salt
– ½ tsp black pepper
For the Veggies:
– 1½ lb baby potatoes, halved
– 1 lb carrots, peeled and cut into chunks
– 2 tbsp olive oil
– 1 tsp salt
– ½ tsp black pepper
Optional: sprinkle of dried herbs for extra flavour
Instructions:
Preheat your oven to 425°F (220°C).
Prepare the Roast
1. Pat the sirloin tip roast dry with paper towel.
2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the roast.
Prepare the Veggies
In a large bowl, toss potatoes and carrots with olive oil, salt, pepper, and optional herbs.
Roast
1. Place the roast on a rack in a roasting pan (or on a sheet pan with the veggies surrounding it).
2. Roast uncovered for 15 minutes at 425°F, then reduce heat to 350°F and continue roasting for about 20 minutes per pound or until internal temperature reaches:
– 125°F for rare
– 135°F for medium-rare
– 145°F for medium
3. Stir veggies halfway through cooking to ensure even browning.
Rest the Roast
Remove roast from oven and tent with foil. Let rest for 10–15 minutes before slicing. This helps the juices redistribute.
Serve & Enjoy
Slice roast against the grain. Serve with the roasted potatoes and carrots — and maybe a little gravy or horseradish on the side.
