Classic Meatloaf with Roasted Garlic Rosemary Red Skin Potatoes

Ingredients:

– 1 lb Lean Ground Beef

– 1/2 cup bread crumbs

– 1/4 cup milk

– 1 egg

– 1 small onion, finely chopped

– 2 tbsp tomato paste

– 1/2 cup tomato sauce

– 1 tsp garlic powder

– 1 tsp dried thyme

– 1 tsp salt

– 1/2 tsp black pepper

– 1/2 cup tomato sauce (for topping)

– 2 tbsp brown sugar (for topping)

Directions:

1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

2. Mix the meatloaf ingredients: In a large bowl, combine the lean ground beef, bread crumbs, milk, egg, chopped onion, tomato paste, tomato sauce, garlic powder, dried thyme, salt, and pepper. Mix everything until well combined, but avoid overworking the meat.

3. Shape the meatloaf: Transfer the mixture into the prepared loaf pan and shape it into a loaf form, smoothing the top with a spatula.

4. Prepare the topping: In a small bowl, mix together tomato sauce and brown sugar. Spread this topping evenly over the top of the meatloaf.

5. Bake for about 1 hour, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).

6. Let it rest for 10 minutes before slicing to allow the juices to redistribute.

7. While the meatloaf is cooking, roast Garlic and Rosemary Red Skin Potatoes according to directions on package and serve alongside the meatloaf!
