Sirloin Tip Roast with Mushroom Gravy and Sautéed Green Beans

Ingredients:
– 1 (3-4 lb) Sirloin Tip Roast
– 2 tbsp olive oil
– Salt and black pepper, to taste
– 1 tbsp butter
– 2 cups mushrooms, sliced
– 2 cups beef broth
– 1/4 cup heavy cream
– 1 lb green beans, trimmed
– 1 tbsp butter (for green beans)
– 1 tbsp garlic, minced
Directions:
Prepare the Sirloin Tip Roast:
1. Preheat the oven to 350°F (175°C).
2. Rub the roast with olive oil, salt, and pepper, then place it in a roasting pan.
3. Roast for 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (135°F for medium-rare).
Make the Mushroom Gravy:
1. In a skillet, melt butter over medium heat and sauté the mushrooms until soft, about 5-7 minutes.
2. Add the beef broth and simmer for about 10 minutes until the gravy thickens. Stir in heavy cream, and season with salt and pepper.
Sauté the Green Beans:
1. Blanch the green beans in boiling water for 2-3 minutes, then drain.
2. In a pan, sauté the beans with butter and garlic for 4-5 minutes until tender.
Serve: Slice the meat and serve with the mushroom gravy and sautéed green beans.
