BBQ Maple Dijon Pork Tenderloin with Mashed Sweet Potatoes & Green Beans

Ingredients:

For the Pork Tenderloin:

– 1 pork tenderloin (about 1 to 1.5 lbs)

– ¼ cup maple syrup

– 2 tbsp Dijon mustard

– 1 tbsp apple cider vinegar

– 1 tsp smoked paprika

– ½ tsp salt

– ½ tsp black pepper

– 1 tbsp olive oil (for grilling)

For the Mashed Sweet Potatoes:

– 2 large sweet potatoes, peeled and cubed

– 2 tbsp butter

– ¼ cup milk (or more as needed)

– Salt and pepper to taste

For the Green Beans:

– 2 cups fresh green beans, trimmed

– 1 tbsp olive oil or butter

– Salt and pepper to taste

Directions:

1. Marinate the Pork: In a bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper. Coat the pork tenderloin with the marinade and refrigerate for at least 2 hours.

2. Grill the Pork: Preheat the grill to medium-high heat (about 400°F/200°C). Lightly brush the grates with olive oil. Remove the pork from the marinade and grill for 15-20 minutes, turning every 4-5 minutes, until the internal temperature reaches 145°F (63°C). Let rest for 5 minutes before slicing.

3. Prepare the Mashed Sweet Potatoes: Boil the sweet potatoes in a pot of salted water for 15-20 minutes until fork-tender. Drain and mash with butter, milk, salt, and pepper until smooth. Adjust consistency with more milk if needed.

4. Cook the Green Beans: In a pan over medium heat, sauté the green beans in olive oil or butter for 5-7 minutes until tender-crisp. Season with salt and pepper to taste.

5. Serve & Enjoy: Slice the pork tenderloin and serve with mashed sweet potatoes and green beans on the side.
