Split Pea & Ham Soup with Bone-In Spiral Ham

Ingredients (Serves 6-8):
For the Soup
– 1 Schinkels’ Bone-In Spiral Sliced Honey Ham (use the bone + about 2 cups of fresh sliced ham, cut into cubes)
– 1 lb (about 2 cups) dried split peas, rinsed and sorted
– 2 tbsp olive oil or butter
– 1 large onion, diced
– 2 carrots, diced
– 2 celery stalks, diced
– 3 cloves garlic, minced
– 8 cups low-sodium chicken or vegetable broth (or water, if preferred)
– 2 bay leaves
– 1 tsp dried thyme (or 2–3 sprigs fresh thyme)
– ½ tsp black pepper (add salt to taste near the end — the ham bone adds natural saltiness)
Optional Garnish & Sides
– Fresh parsley, chopped
– Crusty sourdough bread
– Light garden salad
Directions:
Step 1 – Sauté the Base
In a large soup pot, heat olive oil or butter over medium heat.
Add onion, carrots, celery, and garlic. Sauté 5–7 minutes until softened and fragrant.
Step 2 – Simmer with the Ham Bone
Add the ham bone, cubed ham, split peas, broth, bay leaves, thyme, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 1 ½ – 2 hours, stirring occasionally, until peas are soft and the soup is thickened.
Step 3 – Finish the Soup
Remove the ham bone and bay leaves. If there’s extra meat clinging to the bone, shred it and return it to the pot.
Stir well and taste to adjust seasoning.
Serve – Ladle soup into bowls, garnish with parsley, and serve with sourdough bread and a fresh garden salad.
