Garlic Butter Rib Eye with Herb Roasted Potatoes & Green Beans

🍽 Bite of the Week features Fresh AAA Canadian Rib Eye Steak

👇🏻 Here’s a market fresh meal idea:

Ingredients:

For the Rib Eye Steaks:

– 2 Rib Eye Steaks (1–1¼” thick, from Schinkels’)

– Salt & pepper

– 2 tbsp olive oil

– 3 tbsp butter

– 3 garlic cloves, smashed

– 1 sprig rosemary or thyme

For the Herb Roasted Potatoes:

– 1½ lbs baby potatoes, halved

– 2 tbsp olive oil

– 1 tsp garlic powder

– 1 tsp dried rosemary or Italian seasoning

– Salt & pepper to taste

For the Green Beans:

– 2 cups green beans, trimmed

– 1 tbsp butter or olive oil

– 1 garlic clove, minced

– Salt & pepper to taste

– Optional: lemon wedge for serving

Directions:

Roast the Potatoes:

1. Preheat oven to 425°F.

2. Toss halved baby potatoes with olive oil, garlic powder, rosemary, salt and pepper.

3. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and crispy.

Sear the Rib Eye:

1. Pat steaks dry and season both sides with salt and pepper.

2. Heat olive oil in a cast iron skillet over medium-high heat.

3. Sear steaks for 2–3 minutes per side until a crust forms.

4. Lower heat, add butter, smashed garlic, and herbs to the pan.

5. Baste steaks with garlic butter for another 1–2 minutes, until cooked to desired doneness (130°F for medium-rare, 140°F for medium).

6. Rest steaks for 5 minutes before serving.

Cook the Green Beans:

1. While steak rests, sauté green beans in butter or olive oil over medium heat for 4–5 minutes.

2. Add garlic, season with salt and pepper, and cook for another 1–2 minutes until tender-crisp.

3. Optional: finish with a squeeze of lemon.

Serve It All Together

Plate the garlic butter rib eye with a generous portion of roasted potatoes and a side of green beans. Spoon any extra pan butter over the steak for extra richness.
