– 4 Cod fillets
– 1 cup all-purpose flour
– 1 tsp baking powder
– 1 tsp paprika
– Salt and pepper, to taste
– 1 cup cold sparkling water
– 4 medium russet potatoes, peeled and cut into fries
– Vegetable oil for frying
– Lemon wedges for serving
– Tartar sauce for serving
Directions:
1. Preheat the oven to 400°F (200°C). Place the cut potato fries on a baking sheet and season with salt and pepper. Bake for 30-35 minutes, flipping halfway through.
2. In a bowl, whisk together flour, baking powder, paprika, salt, and pepper. Gradually add cold sparkling water until you get a smooth batter.
3. Heat oil in a deep pan or fryer to 375°F (190°C). Dip the cod fillets into the batter, ensuring they are fully coated, and fry until golden brown and crispy (about 4-5 minutes).
4. Remove the fish and drain excess oil on paper towels.
