Classic Beef Stew with Bread

Ingredients:
1.5 lbs beef stew cubes
4 carrots, peeled and chopped
3 potatoes, cubed
2 celery stalks, chopped
1 onion, diced
4 cups beef broth
1 cup red wine (optional for richness)
2 tbsp tomato paste
2 cloves garlic, minced
2 bay leaves
1 tsp thyme
1 tsp Worcestershire sauce
Salt and pepper to taste
2 tbsp all-purpose flour (for thickening)
Fresh parsley for garnish
Crusty bread for serving
Directions:
1. Brown the Beef: Heat a large pot over medium heat. Add a bit of oil and brown the beef cubes on all sides. Remove the beef and set it aside.
2. Cook the Vegetables: In the same pot, sauté the onions, garlic, and celery until softened (about 5 minutes). Add the carrots and potatoes, cooking for an additional 3 minutes.
3. Deglaze with Wine (Optional): Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let the wine simmer for 2-3 minutes to reduce.
4. Combine and Season: Return the beef to the pot. Stir in tomato paste, thyme, Worcestershire sauce, salt, and pepper. Sprinkle flour over the mixture to help thicken the stew.
5. Add Broth and Simmer: Pour in the beef broth and add bay leaves. Bring the mixture to a boil, then reduce the heat and let it simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the stew has thickened.
6. Adjust Seasoning: Taste and adjust seasoning with salt, pepper, or extra Worcestershire sauce as needed.
7. Serve: Ladle the stew into bowls, garnish with fresh parsley, and serve with a slice of crusty bread for dipping.
