Chicken Fettuccine Alfredo with Parmesan Garlic Bread

Ingredients:
For the Chicken Alfredo:
– 2 Fresh Ontario Boneless Skinless Chicken Breasts (about 1 lb total)
– 2 tbsp olive oil
– 1 tsp salt
– ½ tsp black pepper
– ½ tsp garlic powder
– 12 oz fettuccine pasta
– 3 tbsp butter
– 3 cloves garlic, minced
– 1½ cups heavy cream
– 1 cup freshly grated Parmesan cheese
– ½ cup pasta water (reserved)
– 2 tbsp chopped fresh parsley (optional for garnish)
For the Parmesan Garlic Bread:
– 1 baguette or loaf of crusty bread
– ¼ cup butter, softened
– 1 clove garlic, minced
– 2 tbsp grated Parmesan cheese
– 1 tsp chopped fresh parsley
Directions:
Cook the Chicken
1. Pat chicken dry and season with salt, pepper, and garlic powder.
2. In a large skillet, heat olive oil over medium-high heat.
3. Sear chicken 4–5 minutes per side until golden and cooked through (internal temp: 165°F).
4. Remove from pan, let rest 5 minutes, then slice thinly.
Cook the Pasta
1. In a large pot of salted water, cook fettuccine according to package instructions until al dente.
2. Reserve ½ cup of pasta water, then drain pasta and set aside.
Make the Alfredo Sauce
1. In the same skillet used for chicken, melt butter over medium heat.
2. Add minced garlic and sauté for 30 seconds until fragrant.
3. Stir in heavy cream and bring to a gentle simmer.
4. Whisk in Parmesan cheese until melted and smooth.
5. Adjust consistency with reserved pasta water if needed.
Combine
Add the cooked pasta to the skillet, tossing to coat in the sauce. Top with sliced chicken and a sprinkle of parsley.
Make the Garlic Bread
1. Preheat oven to 375°F.
2. Mix butter, garlic, Parmesan, and parsley in a small bowl.
3. Spread over sliced bread, place on a baking sheet, and bake for 8–10 minutes until golden and crispy.
Serve
Plate pasta, top with extra Parmesan and parsley if desired, and serve with warm garlic bread for the ultimate comfort meal.
