Cheese Tortellini with Honey Garlic Sausage in Blush Sauce

🍽 Bite of the Week features Local Products: Cheese Tortellini and Honey Garlic Sausage

👇🏻 Here’s a market fresh meal idea:

Ingredients:

– 1 package of Cheese Tortellini

– 2 Honey Garlic Sausages (sliced)

– 1 tbsp olive oil

– 1/2 medium onion, finely chopped

– 2 cloves garlic, minced

– 1 can (14.5 oz) diced tomatoes

– 1/2 cup heavy cream

– 1/4 cup tomato paste

– 1/2 tsp Italian seasoning

– 1/2 tsp crushed red pepper flakes (optional for a little heat)

– Salt and black pepper, to taste

– Fresh parmesan cheese, grated (for garnish)

– Fresh basil or parsley for garnish

Instructions:

Cook the Tortellini:

1. In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to the package directions (usually 3-4 minutes for fresh tortellini).

2. Once cooked, drain the tortellini and set aside, reserving a small cup of pasta water.

Cook the Honey Garlic Sausage:

1. In a large skillet, heat olive oil over medium heat.

2. Add the sliced Honey Garlic Sausages to the pan and cook for about 5-7 minutes until browned and cooked through, stirring occasionally. Once cooked, remove from the skillet and set aside.

Prepare the Blush Sauce:

1. In the same skillet, add the chopped onion and cook for 3-4 minutes until softened.

2. Add the minced garlic and cook for another 30 seconds until fragrant.

3. Stir in the diced tomatoes, heavy cream, and tomato paste. Season with Italian seasoning, crushed red pepper flakes, salt, and pepper. Simmer the sauce over low heat for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

Combine Tortellini and Sausage:

1. Add the cooked Honey Garlic Sausage back into the skillet with the sauce, stirring to combine.

2. Gently fold in the cooked cheese tortellini. If the sauce is too thick, add a little reserved pasta water to achieve your desired consistency.

Serve:

1. Once everything is well mixed and heated through, plate the tortellini with sausage in the blush sauce.

2. Garnish with freshly grated parmesan cheese and chopped basil or parsley for added flavour and colour.
