Bang Bang Chicken Skewers

Ingredients: Serves 6
For the Chicken Skewers:
– 2 lbs boneless skinless chicken thighs (or a mix of thighs and breasts), cut into 1-inch pieces
– 3 tbsp extra-virgin olive oil
– 3 tbsp Traeger Chicken Rub (or your favourite poultry rub)
– Skewers (if wooden, soak in water for 30 minutes first)
For the Bang Bang Sauce:
– ¾ cup mayonnaise
– 1 cup sweet chili sauce
– 3 tbsp Traeger Apricot BBQ Sauce (or a fruit-forward BBQ sauce)
– 1 tsp chili sauce (like sambal oelek or sriracha, to taste)
Directions:
Marinate the Chicken:
1. In a large bowl, combine diced chicken thighs, olive oil, and chicken rub. Toss until evenly coated.
2. Cover and refrigerate for at least 30 minutes (up to 8 hours for deeper flavour).
Preheat Your Grill:
If using a Traeger, set it to 450°F and preheat with the lid closed for 15 minutes.
For gas or charcoal grills, aim for medium-high heat.
Make the Sauce:
In a medium bowl, whisk together the mayo, sweet chili sauce, BBQ sauce, and chili sauce until smooth. Set aside.
Assemble the Skewers:
Thread marinated chicken pieces onto skewers, pressing the pieces together so there are no gaps. This helps keep them juicy.
Grill the Skewers:
Place skewers directly on the grill. Cook for 12 minutes, turning once or until lightly charred on one side.
Sauce & Finish:
Flip the skewers, brush generously with the Bang Bang Sauce, and grill for another 6–8 minutes, or until the internal temperature reaches 165°F.
Serve:
Remove from grill and brush with more sauce before serving. Serve hot and enjoy every sweet, smoky, spicy bite!
