Classic Slow-Cooked Pot Roast with Vegetables

Ingredients:

– 3 lb chuck roast

– 4 carrots, peeled and chopped

– 3 potatoes, cubed

– 1 onion, sliced

– 2 cups beef broth

– 2 tbsp tomato paste

– 2 cloves garlic, minced

– 1 tsp thyme

– Salt and pepper to taste

– Fresh rosemary for garnish

Directions:

1. Season the Roast: Season the chuck roast generously with salt and pepper.

2. Sear the Meat: In a large pot, sear the chuck roast on all sides until browned.

3. Add Ingredients: Add garlic, tomato paste, beef broth, thyme, carrots, potatoes, and onions to the pot.

4. Slow Cook: Cover and cook on low heat for 4-5 hours, until the meat is tender and falls apart easily.

5. Serve: Garnish with fresh rosemary and serve hot with vegetables and gravy.
