Beef Stroganoff with Buttered Egg Noodles & Steamed Broccoli

Ingredients (Serves 4):
For the Beef Stroganoff
– 1 lb lean ground beef (Schinkels’ fresh)
– 2 tbsp butter
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 8 oz cremini mushrooms, sliced
– 2 tbsp all-purpose flour
– 1 cup beef broth
– 1 cup sour cream
– 1 tbsp Dijon mustard
– 1 tsp Worcestershire sauce
– Salt & black pepper, to taste
– Fresh parsley, chopped (for garnish)
For the Buttered Egg Noodles
– 12 oz wide egg noodles
– 2 tbsp butter
– Salt & pepper, to taste
For the Broccoli
– 1 lb fresh broccoli florets
– 1 tbsp olive oil or butter (optional)
– Salt, to taste
Directions:
Cook the Egg Noodles
1. Bring a large pot of salted water to a boil.
2. Cook egg noodles until al dente, according to package directions.
3. Drain, toss with butter, and season lightly with salt & pepper. Keep warm.
Steam the Broccoli
1. In a steamer basket over boiling water, steam broccoli for 4–5 minutes until tender-crisp.
2. Optional: drizzle with olive oil or toss with butter and season with salt.
Make the Stroganoff
1. In a large skillet, melt butter over medium-high heat.
2. Add onions and garlic; sauté until fragrant (about 2 minutes).
3. Add mushrooms and cook until golden brown (5–6 minutes).
4. Add ground beef and cook until browned, breaking it into crumbles. Drain excess fat if needed.
5. Sprinkle flour over the mixture and stir well to coat.
6. Slowly pour in beef broth, stirring to avoid lumps. Reduce heat to medium and let it simmer until slightly thickened (3–4 minutes).
7. Stir in sour cream, Dijon mustard, and Worcestershire sauce. Simmer gently for another 2–3 minutes.
8. Season with salt & pepper to taste.
Serve & Enjoy
Plate buttered noodles and top generously with beef stroganoff. Add a side of steamed broccoli for a complete, balanced meal. Garnish stroganoff with fresh parsley before serving.
